Old Fashioned Cookie Recipe Mexican Wedding Cakes (courtesy of Betty Crocker, 1950) 1/2 cup confectioners sugar 1 cup soft butter 1 tsp vanilla 1/4 tsp salt 2 1/4 cups flour 3/4 cup finely chopped nuts confectioners sugar Cream sugar and butter. Add vanilla. Stir in flour and salt, mix well. Mix in chopped nuts. Form into 1 inch balls. Place on ungreased cookie sheet. Bake at 400 degrees for 10-12 minutes. Don't overbake. While still warm, roll in confectioners sugar. When cool, roll once more. Yield: about 4 dozen |
I decided to keep the same recipe from last year as it remains my favorite. They are a delicate cookie and look divine on a party tray with the pure white color. They can be made ahead of time and stored tightly sealed for a week on a shelf (don't freeze). They taste better with age! |
